Winemaking process

Varieties:
Chardonnay is representative of the typical grape varieties found in South Tyrol’s Unterland region and admirably reflect their terroir.

Terroir:
The 40-year-old grapes, tended and harvested by hand, ripen at an altitude of some 400 metres above sea level. They grow on calcareous debris.

Vinification:
Spontaneous fermentation occurs in French tonneaux and large wooden casks: this is followed by storage on the coarse lees, one-year in steel tanks and, finally, a short bottle-aging.

The 20 hectares of the biodynamically cultivated vineyards of Baron Longo are located in South Tyrol’s south, around the picturesque Castelletto in Egna. The vineyards range from 240 metres a.s.l. up to Montagna, in the Trudner Horn Nature Park, where Chardonnay and Pinot Noir grapes thrive. The main varieties produced by the family winery are Chardonnay, Pinot Blanc and Cabernet. As a winemaker, Anton Baron Longo concentrates on wines that are distinguished by their elegance.
