VINIFICATION
Spontaneous fermentation in French tonneau and barrique casks. Racking on the coarse lees, followed by malolactic fermentation on the fine lees, followed by short bottle ageing.
CHARACTERISTICS
Chardonnay and Pinot Blanc from 35-year-old vines. Completely dry and substantial white wine with elegant intensity and succulent minerality. Complex fruity notes e.g. green apple and gooseberry.
Alcohol level: 13.5%
PAIRING
Cooked fish, light meat, asparagus, fresh goat cheese such as tangy hard cheese and South Tyrolean mountain cheese.
