VINIFICATION
Spontaneous fermentation in French tonneau and barrique casks. Racking on the coarse lees, followed by malolactic fermentation on the fine lees, followed by short bottle ageing.

CHARACTERISTICS
Chardonnay and Pinot Blanc from 35-year-old vines. Delicate golden colour, fruity scent combined with exotic notes that develop with a fine bouquet in the mouth and ensure a long finish.
Alcohol level: 13.5%

PAIRING
Fine rich fish, grilled veal chops or lamp served with mushrooms, cheese and foie gras.
